Description

  • 1 lb lean ground chicken
  • 1 cup plain breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh basil
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 28 oz canned crushed tomatoes
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, basil, egg, garlic powder, salt, and pepper. Mix until just combined.
  3. Shape the mixture into one-inch meatballs and place them on the prepared baking sheet.
  4. Bake for about 20 minutes or until golden brown and cooked through.
  5. Meanwhile, in a saucepan over medium heat, combine crushed tomatoes and oregano; simmer for about five minutes.
  6. Once the meatballs are done, toss them in the warm tomato sauce and serve immediately.
