- 9 oven-ready lasagna noodles
- 2 cups fresh baby spinach
- 8 oz cremini mushrooms, sliced
- 1 cup ricotta cheese
- 1.5 cups shredded whole milk mozzarella cheese
- 0.5 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat, add garlic, and sauté until fragrant (about 1 minute). Add mushrooms and cook until golden brown. Stir in spinach until wilted (about 2 minutes).
- In a bowl, mix ricotta, half of the mozzarella, Parmesan, salt, pepper, and an egg if desired until smooth.
- Spread a thin layer of cream at the bottom of a baking dish. Layer noodles, half of the sautéed vegetables, and half of the cheese mixture; repeat layers.
- Top with remaining noodles, pour heavy cream over them, and sprinkle with remaining mozzarella.
- Cover with foil and bake for 30 minutes; remove foil and bake for an additional 15-20 minutes until bubbly.
